Curcumin is a chemical compound extracted from the rhizomes of some plants in the ginger and Araceae families. Turmeric, for example, contains approximately 3% to 6% curcumin, making it a rare diketone pigment in the plant kingdom. Curcumin is an orange-yellow crystalline powder with a slightly bitter taste and is insoluble in water. In food production, it is mainly used for coloring products such as sausages, canned goods, and sauces.

Function

Curcumin has long been widely used in the food industry as a common natural pigment, primarily for coloring canned goods, sausage products, and sauces and marinades. The amount used is determined by normal production needs.

It is also used as an acid-base indicator, with a color change from yellow at pH 7.8 to reddish-brown at pH 9.2.

Turmeric is a commonly used herb, and its main bioactive components are curcuminoids and volatile oils. The former has effects such as lowering blood lipids, anticoagulation, antioxidation, choleretic effects, and anticancer properties; while the latter mainly has anti-inflammatory, antibacterial, and antitussive effects.
