Capsaicin is the primary active compound responsible for the sensation of pungency found in the fruits of plants belonging to the *Capsicum* genus. As a vanilloid alkaloid, capsaicin exerts a potent irritant effect on mammals; it binds to transient receptor potential vanilloid 1 (TRPV1) receptors located on sensory neurons, thereby triggering a burning sensation akin to that of a thermal burn. In addition to imparting a distinctive flavor to food, capsaicin exhibits a wide range of pharmacological activities, including analgesic, anti-inflammatory, antioxidant, and anti-obesity effects, as well as metabolic regulatory functions.

In the pharmaceutical field, capsaicin is primarily utilized as an analgesic. Topical capsaicin creams and patches have been approved for the treatment of chronic pain associated with osteoarthritis, postherpetic neuralgia (PHN), and diabetic peripheral neuropathy. Furthermore, capsaicin exhibits anti-inflammatory, antioxidant, and metabolic-regulating properties, demonstrating promising potential for applications in cardiovascular protection, weight loss, and anticancer therapies.
As a natural food additive, capsaicin is widely incorporated into condiments—such as chili powder, chili sauce, and hot pot bases—to impart a distinctive spicy flavor to food. Owing to its effective antimicrobial properties, capsaicin also serves as a natural food preservative.
Capsaicin is frequently used in the manufacture of riot control sprays (OC sprays); its potent lachrymatory and respiratory irritant effects effectively deter attackers without causing permanent injury.
Leveraging the fact that capsaicin is harmless to birds yet noxious to mammals and insects, it has been developed into rodent repellents, bird repellents, and biopesticides. Additionally, capsaicin is utilized in the formulation of marine antifouling coatings to prevent the attachment of marine organisms, as well as an additive in rodent-resistant cable materials.
