Curcumin is a chemical compound extracted from the rhizomes of some plants in the ginger and araceae families. Turmeric contains approximately 3%–6% curcumin, making it a rare diketone pigment found in the plant kingdom, belonging to the diketone class of compounds. Curcumin is an orange-yellow crystalline powder with a slightly bitter taste, insoluble in water, and is mainly used in food production for coloring sausage products, canned goods, and braised products. Medical research indicates that curcumin has lipid-lowering, anti-tumor, anti-inflammatory, choleretic, and antioxidant effects. Scientists have recently discovered that curcumin may help treat drug-resistant tuberculosis.
