Xanthan gum—is an acidic extracellular heteropolysaccharide produced through the fermentation of the bacterium *Xanthomonas campestris*. As a high-molecular-weight polysaccharide, it is composed of D-glucose, D-mannose, and D-glucuronic acid in a 2:2:1 ratio, typically possessing a relative molecular mass exceeding one million. The bacterial strain responsible for producing this substance was first isolated by the United States Department of Agriculture in 1952.
Due to its unique double-helix molecular structure, xanthan gum exhibits exceptional physicochemical properties, including high viscosity, pseudoplasticity, thermal stability, pH stability, and salt tolerance. It dissolves in both cold and hot water to form highly viscous solutions; its viscosity drops significantly under shear stress but recovers rapidly once the stress is removed. These characteristics make it a high-performance biopolymer widely used across more than twenty industries—including food, petroleum, pharmaceuticals, and personal care products—earning it the reputation of “industrial MSG.”

Beverages: Used in fruit juices, protein drinks, and more; prevents pulp sedimentation, improves mouthfeel, and creates a smoother texture.
Bakery Products: Used in bread and cakes; increases water retention, improves texture, and extends shelf life.
Dairy Products: Added to yogurt and ice cream; prevents whey separation and results in a fine, smooth texture and rich mouthfeel.
Meat Products: Used in products like ham sausages and canned meats; improves water retention and tenderness while preventing shrinkage due to moisture loss.
Condiments: Used in soy sauce and oyster sauce; increases viscosity and cling (coating ability) while enhancing salt stability.
Petroleum Extraction: An excellent stabilizer for drilling mud; offers superior rheological properties, thickening capabilities, and resistance to salt and heat; effectively suspends rock cuttings and prevents wellbore collapse.
Ceramics and Textile Printing/Dyeing: Acts as a suspending agent and stabilizer in ceramic glazes and printing pastes; prevents pigment sedimentation.
Coatings and Adhesives: Functions as a film-forming agent and leveling agent; improves the flow and adhesion of coatings.
Pharmaceuticals: Used as a material for microencapsulated drugs to control sustained release; serves as a tablet coating agent; acts as a suspending agent and stabilizer in oral liquids.
Personal Care Products: Used as a thickener in toothpaste to improve paste consistency and mouthfeel; serves as a thickener and stabilizer in cosmetics to enhance product texture.
